Hardware makers only support a device for a handful of years before moving on to the next model — keeping old chips running forever isn't part of the business.
Browsers keep adding new features (faster graphics, stronger security, better performance), and supporting those on very old engines gets harder every year, so support eventually gets dropped.
Every old code path a browser keeps around is more that can break or be exploited. Maintaining it gets more expensive over time, until it's no longer worth it.
Once a device's operating system stops getting updates, the browser's own security patches usually stop too, even if the browser still "works."
